On the eve of the upcoming weekend, I'm reminded of the most beautiful and simple meal last weekend.  

A smoked salmon tartine, layered with avocado and lemon confit atop a thick slice of crusty bread slathered in butter.  OMG.

Tartines. You open-faced delights, how could I forget you?  So easy to make - so many ways. Here are a few recipes on my list to try.

A picturesque pea mash and radish tartine. Or even simpler, slices of radish on buttered bread with a sprinkling of Maldon salt.

A breakfast tartine made with eggplant, ricotta and soft eggs.

Heirloom tomato season is right around the corner.  Here's a tartine for those summer days.

Ricotta, fig & honey. So decadent, it could be dessert.
